Nigellas Pomegranate, Onion and Coriander Salad

At Christmas I always find myself reaching for one of Nigella Lawson’s great cookbooks.  This year is no exception, and I make no apologies for reproducing this fantastic recipe from Nigella Christmas.  First, it is deceptively delicious, and second it is the perfect accompaniment to the Beef Tagine I cooked a couple of days ago.  And just look at those colours!

Pomegranate, Onion and Coriander Salad

The ingredients might sound weird, but what you end up with is a sweet and sour flavoured salad which doesn’t taste onioney.

This has got to be worth a try, hasn’t it?


Recipe: Pomegranate, Onion and Coriander Salad

This is a super sweet and sour flavoured salad that works surprisingly well at Christmas time.

Ingredients

  • 2 red onions.
  • Juice of 2 limes
  • Juice of 1 pomegranate
  • Seeds of 1 pomegranate

Method

  1. Finely slice the onions.
  2. Cover with the juice of the limes and pomegranate, leave for 30 minutes then drain the juice and dispose the juice (this is what takes away the onion flavour).
  3. Add the pomegranate seeds and a handful of chopped coriander and you’re done!
