Growing up, my Mom always made roasted pumpkin seeds with a little bit of salt. Think it might be time to start that tradition with our four-year-old son. :)

Gitit: I eat them with the skins/coats on, but I know they unfortunately contain some fats...

johanna: I've never tried a pesto with pumpkin seeds, but it's a very interesting idea!

peabody: The smell when they are toasting is delicious and autumnal.

I love pumpkin seeds. That used to be my favorite part of carving a pumpkin is my mom making toasted pumpkin seeds.

My native Austria is knows for its pumkin seed oil (i have never seen any from anywhere else in the world, in fact). we also like to munch the seeds or make a pesto with it. i made some squash bites with pumpkin seed pesto for a party a while ago... a real treat! (and a recipe on my site)
i've never tried to toast my own though!

These are my favorite seeds, here we eat them as a snack, they are sold in begs in the supermarket but also in every kiosk on the scale. They are the most popular seeds around here after the sunflower seeds... you can find their "coats" covering the streets after a good football match. I love them! The only problem is that they contain a lot of calories and oil and its not recomanded if you try to loose weight :)
