This is a beautiful and simple salsa, which is a perfect accompanyment to our Fajita Recipe. This is probably the easiest salsa to make, and is even fresh enough to enjoy with a salad.
Mexican Fresh Tomato Salsa – Ingredients
• 4 Tomatoes, peeled and diced
• 1 Chilli, chopped
• 1 Teaspoon Castor Sugar.
• 1 onion – peeled and diced
• 1 tablespoon lime juice
• 1/2 handful Fresh Coriander, roughly chopped
• Salt and Pepper
Mexican Fresh Tomato Salsa Recipe – Method
1. Peel and dice the tomato as above. To peel, cut crosses into the skin at the top and bottom of the tomatoes, then place in boiling water for 1 minute. Remove the boiling water, replace with cold, and peel easily by hand.2. Combin all ingredients as above in a bowl, tossing by hand to ensure mixing.

Serve with your favourite Mexican dish, or even a simple salads. This is truly versatile!. This is the perfect accompanyment to our Fresh Guacamole Recipe.
VARIATION: Puree half of the salsa, then mix the puree and the whole salsa together. This takes away from the freshness slighly, however makes for a more “tex-mex” feel.
