Kangaroo BBQ Fillet

Think Australia – think kangaroos. Think Australian food – think BBQ. Why not combine the two?. I actually first ate this in Malta, and while that isn’t terribly authentic, it still tasted good.
Kangaroo is a meat not entirely unlike beef, and is quite tender when cooked properly. It goes perfectly on a BBQ, hence this recipe!

Australian BBQ Kangaroo Fillet – Ingredients

• 2 Kangaroo Fillets
• 250ml Red Wine
• 1 Clove of Garlic, finely chopped
• 1 tbsp Tomato Puree
• 1 tbsp Balsamic Vinegar
• 2 tbsp Demerara Sugar
• 1 tbsp Whole Mustard

Australian BBQ Kangaroo Fillet Recipe – Method

1. Mix together all ingredients (except fillets) in a bowl to form a marinade.2. Place meat in bowl, ensuring totally covered by marinade.

3. Leave overnight.

4. Cook fillet on a hot BBQ, brushing the excess marinade on the meat as it cooks.

And To Serve…

Serve with anything else you fancy – from other BBQ’d meat, to fries, and salad. Oh, and of course cold Australian beer! Enjoy!
