Japanese Sushi Rice

Sushi is, in fact, the type and preperation of the rice itself, and not (as most people think) raw fish – that is called sashimi. Geekiness aside, Sushi is nothing without the rice itself, so before you start any type of Sushi, start here.

When we list “Sushi Rice” as an ingredient, simply head to your local Oriental Supermarket, and they’ll point you in the right direction. Otherwise, most supermarkets have appropriate rice, which is labelled as such.

Second stage below is a recipe for Tezu, a marinade used for the rice itself, giving the distinctive flavour.

Japanese Sushi Rice – Ingredients

  • 500ml Sushi Rice
  • 600ml Water
  • 60ml Rice Wine Vinegar (White Wine Vinegar works at a push!)
  • 30g Sugar
  • 5mg Salt

Japanese Sushi Rice Recipe – Method

1. Wash the rice with fresh water, and drain. Repeat several times until the water runs clear.2. Simmer rice in water (600ml, as above) for 20 minutes.

3. Remove from heat and stand for 15 more minutes.

4. Follow recipe for Tezu, below.

Japanese Tezu – Ingredients

  • 200ml Water
  • 30ml Rice Wine Vinegar (White Wine, again, works at a push)
  • 60ml Rice Wine Vinegar (White Wine Vinegar works at a push!)
  • 5g Salt
  • 5g Sugar

Japanese Sushi Rice Recipe – Method

1. Over a low heat, mix the ingredients until all is disolved.

And To Serve…

Break up the rice gently, and slowly mix in the Tezu mixture, being careful not to break up the rice grains. You’re now ready to move onto making Sushi!
