Fresh Mexican Guacamole is a delicious accompanyment to our Fajita Recipe, but equally, can be eaten as part of a summer salad. It is incredibly healthy, and is very refreshing on a hot summers day. This is probably the easiest Guacamole Recipe in the world, but the most delicious!
Mexican Fresh Guacamole – Ingredients
• 3 Ripe Avacados, peeled and diced
• 1 Tomato, peeled and diced
• 1 Chilli, chopped
• 1 onion – peeled and diced
• 2 Cloves of Garlic – chopped
• 1 tablespoon lime juice
• Salt and Pepper
Mexican Fresh Guacamole Recipe – Method
1. Peel and dice the tomato as above. To peel, cut crosses into the skin at the top and bottom of the tomatoes, then place in boiling water for 1 minute. Remove the boiling water, replace with cold, and peel easily by hand.2. Combine all ingredients as above. If you have a pestal and mortar, begin your bashing. If not, put half the mix into a food processor and blitz until smooth. Add the second half of the mix, and pulse a couple of times – this will give the Guacamole a rustic, chunky feel.
